Use canned pineapple!
Fresh pineapple is wonderful but won’t work with this recipe due to it being high in bromelain – an enzyme that breaks down milk protein. Although these enzymes may be great for digestion and more, they will spoil your recipe and create a bitter flavour!
The trick is to use canned pineapple stored in its own juice. Most of the enzymes are killed off in the tinning process (which prevents a bitter end result) and I find that it gives a more consistent result in terms of flavour. Use your favourite brand but I personally like the Great Value and Dole brands.

I have also found similar options on Amazon and eBay.
What makes ice candy so satisfying is their unique shape. They’re fun to eat and so easy to grab-and-go. To eat ice candy, bite off a corner on the bottom and enjoy all the tropical goodness.
If you’re not into using plastic, I recommend reusable options such as these ice pop molds I found on Amazon. A great sustainable option!
These are perfectly soft & creamy
I love a good ice candy that has the perfect balance between icey and soft. These are the perfect texture. The cornstarch mixture works as a stabilizer which results in a beautifully soft texture.
Make some substitutes for a piña colada version!
If you’re dairy-free or don’t have access to coconut evaporated milk, coconut milk does the job! This will result in more of a piña colada flavour – just as delicious!
