Strawberry Matcha Tres Leches Cake

This Tres Leches Cake, inspired by the popular Starbucks strawberry-matcha latte, is the perfect dessert for matcha lovers. This flavour combo is a match(a) made in heaven!

What is Tres leches?

Tres leches is a traditional Latin American cake. It is a light cake that is soaked in three types of milk (hence the name “tres leches”) and is topped with whipped cream. Authentic tres leches cake is truly one of a kind and is a must try. It’s a great dessert for anyone who isn’t into super heavy, overly sweet cakes. Plus, it’s the perfect cake for parties and get-togethers.

The type of matcha you use matters!

Use a good quality culinary grade matcha for this cake. Make sure you like the flavour of it as this will be the most prominent flavour in the cake.

I shared a previous recipe for an ube tres leches cake last month. I made some changes to the cake batter to get a lighter cake. I am definitely not a baker, but after testing several batches, I finally came to a texture that is light, fluffy, and absorbs the milk beautifully. 

Making the strawberry whipped cream

You can make the strawberry whipped cream several ways. When testing this recipe I tried using fresh strawberries, jello mix, and jam. Freeze-dried strawberries are also a great option if you have access to them.

Note: Fresh strawberries may turn your whipped cream sour due to their acidity levels.

My favourite flavour came from using smooth strawberry jam. It’s accessible and I find that it gives the best natural strawberry flavour without watering down the whipped cream!

Use cake flour for a light cake

Cake flour has a lower protein content than all purpose flour. This is what will help create a light and tender cake which will absorb the milks beautifully. 

If you don’t have cake flour, that’s no problem! 

To make DIY cake flour all you need is all-purpose flour and cornstarch. For every cup of all-purpose flour, remove 2 tbsp and replace it with 2 tbsp of cornstarch. 

This cake was seriously out of this world! It was super fun to make and the colour combo makes it beautiful as well. If you’re a matcha lover, you MUST try this out!

Ingredients

  • Matcha Sponge
  • 5 large eggs

  • 3/4 cup white sugar

  • 1/2 cup milk

  • 1 tsp vanilla extract

  • 1 1/3 cups cake flour

  • 1/8 tsp salt

  • 1 tsp baking powder

  • 2 tbsp high-quality culinary or ceremonial grade matcha powder

  • Matcha Milk
  • 1 cup milk

  • 1 can evaporated milk

  • 1 can condensed milk

  • 2 tsp matcha powder mixed in 1/4 cup hot water

  • Strawberry Whipped Cream
  • 2 cups heavy cream

  • 1/2 cup strawberry jam

  • 1/4 cup icing sugar

  • Matcha powder and diced strawberries for topping

Directions

  • Preheat oven to 350F
  • Separate eggs, placing yolks and whites in 2 large bowls.
  • Whip egg whites with a hand or stand mixer until they achieve soft peaks and set aside.
  • In the second bowl whip egg yolks with sugar until it becomes a pale yellow colour.
  • Add milk and vanilla to the bowl and mix.
  • In a separate bowl, whisk dry ingredients and sift into the egg yolk mixture.
  • Fold in dry ingredients gently. Do not overmix.
  • Add half the egg whites to the bowl with egg yolk mixture, folding gently. Add remaining egg whites and fold until incorporated. Do not overmix.
  • Pour batter into a buttered 9×13 inch baking dish and bake for 20-25 minutes.
  • While cake is baking, combine milk, evaporated milk, condensed milk and matcha mixture. Set aside in the fridge to chill.
  • When the cake is baked, allow to cool before cutting about 1/4 of an inch off the edges. Use a skewer to poke many holes into the cake.
  • Slowly pour the milk mixture over the cake. It should absorb all of the liquid. Chill for 8 hours. Right before you are ready to serve, whip the cream, strawberry jam and icing sugar until they reach stiff peaks.
  • Spread the whipped cream over the chilled cake, garnish with optional matcha powder and finish with diced strawberries.
  • Serve and enjoy! 🍵🍓
