Healthy 30 Minute Goat Cheese Stuffed Chicken Breast

This Healthy Mediterranean Chicken recipe completely changed my outlook on nutrition. Healthy food doesn’t have to be boring and this dish is a testament to that. Each flavour in this dish contributes to creating a wonderful experience in every bite. 

Ditching diets and welcoming balance.

Sometimes we fall into the idea of recreating our lives when a new year rolls in. For years I would promise to try new diets and all it did was put me in a cycle with food. This year, I’m focusing more on balance which I think is a more sustainable plan in the long run!

I was inspired to create this dish after trying a similar meal at a restaurant last year. It was different from the usual pasta and rice dishes you’d find at many restaurants. It wasn’t a salad either. So I was intrigued! I wasn’t able to crack their secret recipe but was able to customize it with some ingredients I have at home. 

Stuffing chicken breast can be tough but you can use toothpicks to secure the goat cheese filling if you are worried about it falling out. Goat cheese is pretty rich so I find that 2-3 tablespoons of filling per chicken breast is a good amount per serving.

Meal prep doesn’t have to be boring!

This recipe serves 4 but you can adjust it depending on how many servings you want. If you’re looking to save time cooking during the week, this is a great recipe to prep and keep in your fridge for a couple of days. I’m a huge fan of meal prepping and this recipe add the little bit of spice to keep you looking forward to your weekday meals.

Ingredients

  • Chicken Breast
  • 4 chicken breasts

  • 1.5 tbsp salt

  • 2 tsp ground black pepper

  • 3 tsp smoked paprika

  • 1 tsp turmeric

  • 2 tsp cumin

  • 1 tbsp garlic powder

  • Goat Cheese Filling
  • 150g goat cheese

  • 1 clove crushed garlic

  • 1 tsp smoked paprika

  • 1tsp salt

  • 2 tbsp olive oil for cooking

Directions

  • Preheat oven to 375 degrees F.
  • With a paring knife, carefully cut a pocket into each chicken breast.
  • Add chicken breast to a bowl and add seasonings. Mix until chicken breasts are thoroughly and evenly seasoned. Set aside.
  • In a separate small bowl combine goat cheese, garlic, smoked paprika, and salt. Mix until ingredients are combined.
  • Add 2-3 tablespoons of goat cheese mixture into the pocket of each chicken breast. Make sure that the mixture is not overflowing from the chicken.
  • Heat a pan on medium-high heat and add olive oil.
  • Once pan is heated, sear each side of the chicken breasts for 3-5 minutes depending on thickness.
  • Once seared, transfer the chicken to an oven-safe dish or place your oven-safe pan in your oven. Bake for 15-20 minutes until chicken is cooked through. Once it reaches an internal temperature of 165 degrees F, it is ready.
  • Serve with rice and/or sautéed veggies and enjoy!
